A culinary experience you’ll never forget...

Inside Barcelona’s Palace Hotel (formerly the Ritz) lies one of Spain’s most glamorous restaurants. Caelis is the creation of Michelin star chef, Romain Fornell, a French restaurateur considered one of the fathers of modern French cuisine. Fornell was the youngest chef in 2001 to win a Michelin star at age 24 and shortly after in 2005 was awarded his second star for his culinary excellence at Caelis.  On our last visit to Barcelona we decided to evaluate the fine establishment and felt it was our imperative duty to report back. Here are the reasons why you must try it...

We cannot review Caelis without firstly mentioning the creative and delicately prepared tasting menu, a flurry of French inspired dishes that are consistently impressive. But it’s Fornell’s famous dessert, the Explosion of Honore that will create a culinary experience you’ll never forget. This dish is the centerpiece of Caelis’ esculent appeal.

We don’t want to spoil the experience for the first-timers out there but let’s just say; this is not your average dessert. Wait staff begin the preparations by draping a golden cloth across your table and what follows is an extravagant private show. The dessert is artfully assembled right in front of you. Ingredients are scattered across the table, caramelized popcorn, fresh berries, chocolate crème glace, edible blooms and even a smoky haze fills the table.  What you’re left with is the most delectable dish known to mankind. The ‘Explosion of Honore’ is truly an extraordinary sensory delight not to be missed.

The fun does not stop after dinner. Also situated inside the Palace Hotel is the Rien de Rien Cocktail Club. This superb cocktail bar and jazz club is the creative love child of Romain Fornell and entrepreneur Oscar Manresa. The bar is absolutely stunning. The whole experience is completely encapsulating, you forget that you are in Barcelona and feel immediately transported back to another era of luxury, decadence and indulgence. Guests can enjoy the intimate live jazz concerts whilst sipping on the world’s most exquisite cocktails. No exaggeration, they were the best cocktails we have ever tasted, thanks to world-renowned mixologist, Danny Martin.
